To enhance your bruschettas, always have a great accompaniment on hand, or for an awe-inspiring appetizer, we recommend marinated cauliflower. You’ll be pleasantly surprised and satisfied.

Indeed, with this fantastic recipe, you can preserve cauliflower and enjoy it whenever you like, even out of season, as vinegar allows for prolonged preservation. Its aroma and exquisite taste will surely arouse curiosity in everyone.

Moreover, if you’re planning a dinner with friends, try serving it alongside cheeses, meats, or fish, and you’ll achieve a success that will leave you speechless. The preparation is very simple, even the most inexperienced cooks won’t go wrong! Having trouble believing it? Well, then all you have to do is get to work and see for yourself.

Ingredients:

  • 1 cauliflower
  • 500 ml white wine
  • 500 ml vinegar
  • 1 bay leaf
  • 1 tablespoon black peppercorns
  • 1 handful of coarse salt
  • Salt to taste

How to Preserve Cauliflower for the Whole Year:

Firstly, detach the cauliflower florets from the stem, then place them one by one in a bowl of salted water with a handful of coarse salt and let them soak for 1 hour.

Next, transfer the cauliflower florets to a saucepan of salted and peppered water with peppercorns, bring to a boil, cook for no more than 5 minutes, drain them, and pat them dry gently with a kitchen towel.

Now, place the florets in a bowl with very cold water to stop the cooking and keep them crunchy. Pour the vinegar and wine into a clean saucepan, add the bay leaves, light the fire, bring to a boil, then turn it off.

Finally, place the cauliflower florets in a sterilized glass jar, add peppercorns, bay leaves, and the boiled wine and vinegar, seal with the lid, turn it upside down, and let it rest for 3 weeks before opening and enjoying them.
